The Bee's Knees


The citrus and honey aromas of this charmingly-named Prohibition cocktail were probably intended to mask the harshness of bathtub gin. The honey provides warm, floral undertones that aren’t present in sugar and which create a complex maze of flavours when placed into such a simple drink. You can try different honeys in this cocktail, as they will sway the drink’s profile. "The bee's knees" was, as it is today, slang for something superlative.


60ml Deco No.22 Gin
15ml of lemon juice
A teaspoon of honey
A splash of room temperature water
Lemon peel


This cocktail is a super-simple to make. Stir a generous teaspoon of honey in a splash of room temperature water in the bottom of a cocktail shaker until it is almost dissolved. Add 60ml gin, 15ml fresh lemon juice and ice. Shake vigorously, then strain into a cocktail glass and garnish with a lemon twist. (Just make sure the Honey is stirred in properly, or you'll end up with clumps of honey on the side of your shaker!)
